Starting with a greeting of bubbling wine and appetizers and following by a brief introduction, your “filled pasta” course will be held in my very well equipped private kitchen surrounded by an inspiring outdoor garden location. I will show you how to choose ingredients and how to use them in the best possible way. We will make various pasta dough (including the black ink) to examine various textures and usages. Then while the dough is resting we will make various fillings bases like mushrooms, lobster and prawns, ricotta & spinach, ham& cheese, artichokes etc. Under my guidance we will make different types of filled pasta shapes including one for my signature dish. Of course when it comes to pasta the sauce its very important!! And in most cases to accompany filled pasta simplicity is the key. The next step will be how to present pasta and the combination with various sauces. It is really not the end!! The best is still to come. All our efforts will be followed by a dinner to socialize and comment on the pasta we just prepared. The dishes will be match with great wine combinations on a nice set up dinner table. Of course take aways are mostly welcomed! Remember.... “Cooking is a very much social and culture tool that allows us to explore different sensations and connecting all our senses”. This will be very much part of our experience.
I am an Italian Royal master chef, caterer and pastry chef living in London and working for many reputable private residences around the globe. My experience in cooking goes well back from my infantry age when I was devouring my interest in food, desperately grabbing my mum’s skirt while she was performing magic in the kitchen. I still remember my sticky fingers! Since then I never ceased aiming for excellent food and first class service. At 14 years old I attended the International cooking and hospitality school of Matera, Southern Italy (Capital of European Culture 2019) for 5 consecutive years. My career as a Chef in London started in 1980 at the young age of 19 after working in many top London restaurants and hotels. I established myself as a private Chef amongst members of the Royal Family and many other distinguished clients.
