Co budeš dělat

We will: Make bread dough, discuss grains, seeds, flour types, hydration, salt and the importance of weights and measures.
You will learn how to make and maintain a sour dough starter.
You will learn to shape loaves ready for baking and set them aside in bannetons.
We stretch and fold dough, discuss auto laise and the chemical processes at play.
Then you will learn how to use a lune to cut loaves and peel loaves into the oven. We look at the relationship between temp, hydration, time and yeast activity.
You will learn how to use a cast iron camp oven to bake great bread at home in your gas or electric oven.
We will discuss brick oven construction, lighting the fire, wood types, length of burn, hazards etc. After removing the bread from the oven we will enjoy a morning tea of fresh bread with seasonal toppings like fresh herbs , and butter and jam with good coffee and tea.
Wrap your loaf to take home.

I am a qualified chef and teacher. Recently I ran my own wood fired eatery for 6 years and worked as a wood fired baker at the Bruny island cheese co for 7. Some of my earliest memories were of my Father who loved making bread and beer. His passion for fermentation and growing food came from his father, and it has rubbed off again. For two hours each bake day I make sourdough bread for my roadside stall. I love the alchemy of wild yeast, water, flour and fire. I have fired a brick oven at least 4000 times. Speaks for itself really. On the days I don't bake I garden.

Stunning location, magical studio. John debunked many bread myths to put on track to making fabulous bread with minimal effort and zero cleanup. A wonderful teacher. Superb coffee. A holiday highlight!

I thought it was well organised with different stages of the process already set up, to work through and understand. As someone who is already making sourdough bread I still learnt a lot from John. I wouldn’t hesitate to recommend the course to others.

We had a great morning with John learning the art of making sourdough bread, rolls and pizza bases. We chatted throughout and finished with lovely coffee and bread. The whole morning was very enjoyable and after a big walk in the afternoon, it was wonderful to relax with the bread we took home and had it with Bruny Island cheese, fresh pear and a glass of wine 😋
