Our Colombian Rum Experiences are a journey of flavors through the fascinating history of rum and it’s creation process. The experience starts with a rum based welcome cocktail followed by a journey through the history of the origin of sugar cane from Papua New Guinea over India and the Mediterranean to the West Indies and Colombia. You are going to try fresh sugar cane, its rich in minerals juice extract called Guarapo and learn how sugar was made and refined in the past. Fermenting sugar and its sub-products makes us able to try an alcoholic beverage slaves were drinking in the Caribbean and Marco Polo in India long time ago. With the help of our copper pot still you will be able to convert this „sugarcane wine“ into fresh rum in the distillation process and make you understand the difference between the three steps of head, body and tail in every alcoholic distillation. Now a „flavor board“ with spices, fruits and nuts helps you to distinguish rums aroma profiles before tasting five delicious Colombian rums.
I'm living for 8 years in Cartagena and am the bar manager at a Cocktail Bar called EL BARÓN and a restaurant called COLETTE. I'm studying the history of spirits and especially y sugar cane spirits of Colombia and the Caribbean and everything else I'm able to find about Coffee, Chocolate, and Tobacco. I also collect rums, viche, and every sugar cane spirit I am able to find (and effort :) ) and travel as much as possible in the Caribbean to learn and get to know. As I studied Chemistry I distill rum by my self and teach it to my clients.

Our bar EL BARÓN lays at Plaza San Pedro, a place where sugar cane was planted as soon as the city was founded and where Spanish settlers, slaves and indigenous started to ferment molasses to guarapo. This alcoholic beverage was drunken over 150 years before the first copper-pot-stills arrived. Also, Sir Francis Drake drank here a drink called "El Draque" a cocktail that would later turn into being the Mojito.
