That means raw oysters, bacon, and his most talked-about specialty, gougeres. His latest is Café Nordoy, a classic European bistro inside the boutique Hotel Nordoy on Nachalat Binyamin Street, a few blocks from the Carmel Market. Seafood is in the spotlight here, and you’ll find dishes like a scallop burger, sausages stuffed with beef and gouda, and a seafood pasta with garlic and white wine
