If it swims and can be eaten, chances are it’s at the Golden Century. Live fish, crustaceans, and molluscs are staples, prepared in the classic Southern Chinese Canton style: stir-fried, salt and peppered, steamed, or wok fried in a traditional sauce. The restaurant is open late—come at midnight to dine with the cream of Sydney’s restaurant scene. Ask the waiters what special seafood they have that’s not on the menu, and peruse the aquarium of live tanks along the wall. It might be live Queensland scallops, local shortfin eel, or wild king prawns that are off menu but still available.

A Sydney institution! Open until 4am, this is where all the best Sydney chefs go to eat after they've done service at their own restaurants. If you like tofu, try the salt & pepper tofu. A house specialty is their pippes in XO sauce. At peak times there'll be a wait, but from 11pm onwards you should be able to get a table immediately. They don't really do dessert, but you will be given complimentary watermelon and a small biscuit or tart once you finish your main meal. It can get a bit expensive when you add alcohol but if you're interested in a slap-up Chinese feast with fantastic seafood, I wouldn't go past the GC.
